Choosing a grade for your menu
- Lattes and flavoured drinks — a latte needs about 4–5g of matcha per cup (milk mutes the tea, so it takes roughly double the straight-tea dose). Mid-range ceremonial grades usually hit the best balance of colour, flavour and cost; culinary grades work for heavily sweetened or blended drinks.
- Straight usucha — 2g per cup. If you serve matcha neat, the higher ceremonial grades justify themselves.
- Baking and desserts — culinary grades keep colour and bitterness balance at oven temperatures without ceremonial pricing.

The economics
At 4–5g per latte, a 1kg bag yields roughly 200–250 drinks. Current 1kg prices are in the wholesale catalogue, so you can work out your per-cup cost per grade before you order. Volume discounts apply from 10kg (−5%) and 100kg (−10%).
