Too bitter for my taste

Hisui is made from Sayamakaori, a relatively rare Japanese tea cultivar with a distinctive flavor profile. It is known for its exceptionally vibrant green color and strong umami, but as you mentioned, it can also have a more noticeable bitterness and astringency compared with some of our other matcha.
This stronger character is one of the reasons Hisui is quite popular for matcha lattes, as its flavor holds up well when mixed with milk. However, we completely understand that the bitterness can be too pronounced depending on personal preference.

Amazing taste, smooth milky soft taste with smooths matcha finish taste
Really enjoyed this matcha! The color is such a beautiful deep, bright green and it’s so true to its description. It’s creamy, nutty, and rich in umami, with a silky-smooth texture.
I had it with oat milk, and the nuttiness came through even more, it paired so well together. Definitely a matcha I’d happily have again. 💚
Tried Wakokoro Tea’s Akane Hojicha and I definitely love this one. 🤎
It’s medium-bodied, toasty, and has a subtle smoky note with a natural sweetness. I also love that it has little to no astringency, so it’s really smooth and easy to drink.
It holds up really well in a latte too without losing that lovely roasted flavor. Definitely one I’d happily reach for again!
